Nestled on the sunny slopes of Fully, in the heart of Valais, Christophe Abbet's Ermitage vineyard is rooted in alluvial and stony soils shaped by the Rhône. The steep terraces, supported by dry stone walls, benefit from generous sun exposure that promotes optimal grape maturity. The distinct continental climate, with hot and dry summers, is tempered by valley winds, allowing for beautiful aromatic concentration while preserving freshness. This mosaic of micro-parcels gives the cuvée a strong territorial identity.

Made from Ermitage vines carefully hand-picked at full ripeness, this white wine is produced by gentle pressing of whole grapes, followed by light settling to preserve the aromatic richness. Fermentation takes place slowly, mainly in barrels, with precise temperature control to promote the expression of the grape variety and its terroir. Aging continues on lees, in barrels, with measured bâtonnage, to bring volume, complexity, and length on the palate, before unhurried bottling.

This wine reveals notes of ripe yellow-fleshed fruits, exotic fruits, and dried fruits, complemented by delicate floral nuances, spicy touches, and a light honeyed character. On the palate, the body is ample and enveloping, supported by a discreet minerality and balanced acidity that prolongs the tasting experience. The rich texture is accompanied by a long and persistent finish, leaving an impression of depth and harmony.

Ticino, close to Italy, is dominated by Merlot, which is vinified there as both red and white (Merlot Blanc is vinified without contact with the grape skins). The mild climate and clay-limestone soils give these wines remarkable structure and complexity. Neuchâtel excels in the production of white wines, particularly its Chasselas, but is also known for its Œil-de-Perdrix, a delicate and highly regarded rosé. Swiss wines, often produced in small quantities but with meticulous attention to detail, are primarily consumed locally or exported in small amounts, making them hidden gems for connoisseurs and wine lovers worldwide.
