The vines grow on decomposed sandstone soils and are dry-farmed without irrigation. After hand harvesting, the wine ferments spontaneously with native yeasts, using 20% whole bunches. The wine then ages for 10 months in large oak casks. No chemical inputs are used apart from a low dose of sulphur.
