It embodies South Africa's \u003cstrong\u003esignature red grape variety\u003c\/strong\u003e , a cross between Pinot Noir and Cinsault. Fermentation begins in stainless steel vats, then the wine is \u003cspan\u003eaged for 22 months in oak barrels (60% French and 40% American). In total, 40% new barrels, 30% second-use barrels and 30% third-use barrels were used for aging.\u003c\/span\u003e The bouquet is intense, with layered notes of \u003cstrong\u003eblack cherry\u003c\/strong\u003e , \u003cstrong\u003eblackberry\u003c\/strong\u003e , \u003cstrong\u003ecranberry\u003c\/strong\u003e and \u003cb\u003eblond tobacco,\u003c\/b\u003e \u003cstrong\u003eplum\u003c\/strong\u003e , \u003cstrong\u003ewildflowers\u003c\/strong\u003e and \u003cstrong\u003elicorice\u003c\/strong\u003e . The palate is rich and complex and reflects silky tannins, giving the wine suppleness and texture.
