Thomas and Emma Holt first went to New Zealand, then to Canada, working at various wineries before arriving in northern Spain to found their own. The region produces grapes of very high quality (thanks to the high altitude and cool climate of \u003cstrong\u003eSomontano\u003c\/strong\u003e). The grape varieties in this cuvée's blend were chosen for their suitability to the Somontano climate. As each variety ripens at slightly different times, Thomas and Emma make use of the full spectrum of their grapes' ripeness and capture their most desirable characteristics. The early pickings of \u003cstrong\u003eMerlot\u003c\/strong\u003e and \u003cstrong\u003eTempranillo\u003c\/strong\u003e bring plenty of red fruit flavours to Paso Primero, while the final picking of\u003cstrong\u003e Cabernet Sauvignon\u003c\/strong\u003e gives the wine structure and complexity. Fermentation takes place in stainless-steel tanks, then 30% of the wine is aged for \u003cstrong\u003e6 months in oak barriques\u003c\/strong\u003e, giving the wine a fine overall balance. On the palate, the wine expresses aromas of \u003cstrong\u003ewild strawberries\u003c\/strong\u003e, \u003cstrong\u003ered cherry\u003c\/strong\u003e, \u003cstrong\u003eraspberry\u003c\/strong\u003e, \u003cstrong\u003eground coffee\u003c\/strong\u003e, \u003cstrong\u003eleather\u003c\/strong\u003e, \u003cstrong\u003eblack mushrooms\u003c\/strong\u003e,\u003cstrong\u003e liquorice\u003c\/strong\u003e and \u003cstrong\u003epepper\u003c\/strong\u003e. The wine is powerful, yet the alcohol is surprisingly discreet, no doubt thanks to the well-judged blend and refreshing acidity.
