Promoting Sicily's native grape varieties, organic farming and making high-quality products are the pillars of the estate.

This cuvée is made from Grillo, a native Sicilian grape variety. The vines grow on soils of different types because the estate is crossed by the Platani river, which over the years has left soil that is at once silty, sandy and full of river stones. The grapes are hand-harvested into small crates. After gentle pressing, fermentation takes place in stainless-steel tanks. The wine is aged for 6 months on its fine lees in the same vessel, then rests for a further 2 months in bottle. It reveals aromas of white nectarine, fresh lychee, lemon, Granny Smith apple, hawthorn, ginger and melon, with chalky notes. The palate is fresh and finely chiselled around a mineral, sapid backbone. The finish is mouth-watering and full of tension.
