These cool nights lengthen ripening and preserve the acidity of Pinot Noir.\u003c\/p\u003e\u003cp\u003eThe grapes from each vineyard are vinified separately. Fermentation takes place mainly in stainless-steel tanks, but also in oak and concrete vessels, with around 3% whole clusters. The intense, deep fruit comes with a floral touch and delicate oak.
