The vines, around forty years old, occupy east- and south-facing slopes between 220 and 380 metres above sea level, on decomposed granite and silt soils. Breezes from False Bay, 14 kilometres away, and from the Benguela current to the north-west bring morning mists and freshness: temperatures here are at least 3 °C lower than inland.

The grapes are harvested at different levels of ripeness to enrich the complexity of the fruit, after meticulous canopy management that promotes airflow around the bunches. Destemmed, they macerate for about six hours on their skins before gentle pneumatic pressing. The juice is cold-settled for two days, then ferments with selected yeasts between 12 and 16 °C, each plot being vinified separately. The wine then rests for three months on its lees before blending and bottling.

This wine reveals notes of passion fruit, guava, pineapple, grapefruit, lime, gooseberry, cut grass and blackcurrant leaf. The bright, exuberant nose combines tropical fruit, citrus and the herbaceous touches characteristic of the variety. The palate is lively and zesty, carried by taut acidity and a texture slightly rounded by lees work. The fresh, thirst-quenching finish lingers on citrus.

https://www.lebaroudeurduvin.com/en-hr/products/jordan-estate-sauvignon-blanc-chameleon-wo-stellenbosch-afrique-du-sud
