The harvest is done by hand to preserve the integrity of the berries and ensure rigorous selection on arrival at the winery.\u003c\/p\u003e\n\u003cp\u003eVinification begins with a 3-day pre-fermentation cold maceration; 50% of the grapes are vinified in stainless-steel tanks and the other half in concrete eggs, with native yeasts to preserve the identity of the terroir. Two daily pump-overs ensure controlled extraction. Malolactic fermentation and ageing then take place in 225- and 500-litre oak barrels, 50% of them new, for 12 months before the final blend.\u003c\/p\u003e\n\u003cp\u003eThis wine reveals notes of \u003cstrong\u003eraspberry\u003c\/strong\u003e, \u003cstrong\u003ewild blackberry\u003c\/strong\u003e, \u003cstrong\u003eblueberries,\u003c\/strong\u003e \u003cstrong\u003echerry, smoky spices\u003c\/strong\u003e, \u003cstrong\u003etobacco leaves\u003c\/strong\u003e and \u003cstrong\u003eundergrowth\u003c\/strong\u003e. On the palate, it is structured and deep, carried by lovely acidity that brings zest and balance, while firm but well-polished tannins offer a compact, silky texture.
