Domaine Parent, a family house rooted in Pommard for nearly thirteen generations, grows Pinot Noir there on clay-limestone soils. The premiers crus are partly ploughed by horse, and the estate, certified organic since 2013, applies biodynamic methods guided by the lunar calendar.\u003c\/p\u003e\u003cp\u003eHarvested by hand, the grapes are sorted on two tables, one of them vibrating. Depending on the vintage, they are destemmed or vinified with a proportion of whole bunches, after a cold maceration of three to five days. Gentle punching down and pumping over accompany a temperature-controlled fermentation, for a maceration period of 16 to 18 days. Sensual, refined and elegant, it presents a powerful nose dominated by black fruit and lifted by a floral note.
