The Blank Canvas estate cultivates its plots there in a cool, sunny climate, tempered by the maritime influence of the Cook Strait. The soils, composed of alluvial gravel mixed with deeper silts, promote deep root growth and slow ripening, resulting in precise, elegant wines with beautiful natural freshness.

The Pinot Noir grapes from Settlement Vineyard are hand-harvested, carefully sorted, and mostly destemmed, with a varying proportion of whole bunches. Fermentation takes place in open-top fermenters using native yeasts, with gentle punch-downs to delicately extract color and tannins. After pressing, the wine is transferred to French oak barrels, including a portion of new oak, for a long aging on fine lees before bottling without excessive filtration, to preserve the purest expression of the terroir.

This wine reveals notes of black cherry, ripe plum, and red berries, complemented by floral touches of violet and peony, as well as spicy nuances of black pepper and clove.
