Facing west and south-west, the vines grow on sandy Goldridge soils over marine sediments and fossils, under the direct influence of the Pacific fogs and winds.\u003c\/p\u003e\u003cp\u003eThe grapes are harvested by hand, at night, sorted as whole bunches and then fully destemmed. Each block is vinified separately in small two- to four-tonne tanks, without cold maceration, with native yeasts and limited punch-downs for gentle extraction. Only the free-run wine is moved by gravity into François Frères barrels, 25% of them new, for eleven months of ageing and spontaneous malolactic fermentation. The wine is bottled without fining or filtration.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003eraspberry\u003c\/strong\u003e, \u003cstrong\u003estrawberry\u003c\/strong\u003e, \u003cstrong\u003ered cherry\u003c\/strong\u003e, \u003cstrong\u003erose petal\u003c\/strong\u003e, \u003cstrong\u003ehibiscus\u003c\/strong\u003e, \u003cstrong\u003elavender\u003c\/strong\u003e, \u003cstrong\u003etea leaf\u003c\/strong\u003e and \u003cstrong\u003ecrushed stone\u003c\/strong\u003e. Just-ripe red fruit is surrounded by floral and mineral notes of great purity.
