The Palomino grapes come from partner vineyards in the district, planted on the white, chalky soils typical of the region. The proximity of the Atlantic Ocean and the humidity of the sea breezes create ideal conditions in Sanlúcar for the development of flor, the signature of manzanilla.\u003c\/p\u003e\u003cp\u003eThe grapes are harvested in early September and only the free-run juice is used. The base wine ferments and is then fortified with grape spirit to 15% in February. It ages under a veil of flor in 600-litre American oak casks, within a solera of three to nine criaderas, for an average age of around three years.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003egreen apple\u003c\/strong\u003e, \u003cstrong\u003elemon\u003c\/strong\u003e, \u003cstrong\u003eyeast\u003c\/strong\u003e, \u003cstrong\u003ebread dough\u003c\/strong\u003e, \u003cstrong\u003efresh almond\u003c\/strong\u003e, \u003cstrong\u003ehazelnut\u003c\/strong\u003e, \u003cstrong\u003echamomile\u003c\/strong\u003e and \u003cstrong\u003esea spray\u003c\/strong\u003e. The pale straw colour heralds a briny, yeasty nose of great clarity.
