The grapes come from \u003cstrong\u003efive vineyards\u003c\/strong\u003e in the Hemel-en-Aarde and Overberg regions. They use \u003cstrong\u003enatural fermentation\u003c\/strong\u003e in 228- and 500-litre oak barrels (10% of them new), where the wine stays for \u003cstrong\u003e9 months\u003c\/strong\u003e before bottling. \u003cstrong\u003eNo sulphur\u003c\/strong\u003e or any other chemical input is added before fermentation. This wine is a strong expression of the exceptional fruit from the different plots. The palate shows lovely concentration, combining aromas of \u003cstrong\u003elime\u003c\/strong\u003e, candied lemon, \u003cstrong\u003epineapple\u003c\/strong\u003e, \u003cstrong\u003ewhite peach\u003c\/strong\u003e and \u003cstrong\u003ecaramelised apples\u003c\/strong\u003e, along with caramel and \u003cstrong\u003ebutter\u003c\/strong\u003e. The rich, enveloping palate leads to a \u003cstrong\u003elingering finish\u003c\/strong\u003e, balanced by a crisp acid backbone.
