The vines are planted on steep terraces, exposed to the fresh oceanic influence and Atlantic winds, on volcanic soils rich in basalt. This unique terroir, characterized by high humidity and moderate temperature swings, allows for a slow maturation of the grapes and gives the wine a natural tension, great aromatic precision, and a very clear expression of its island origin.\u003c\/p\u003e\u003cp\u003eThe Tinta Negra grapes from the São Jorge plot are harvested by hand, then gently pressed before a controlled fermentation interrupted by mutage with wine spirit, in order to preserve a portion of the natural sugars. The wine is then aged for a long time in canteiro, in used oak barrels, subject to natural temperature variations, which promotes slow oxidation and aromatic concentration. After this traditional aging, the different barrels are blended, lightly filtered, and then bottled.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003edried fruits\u003c\/strong\u003e, \u003cstrong\u003ecandied orange peel\u003c\/strong\u003e, \u003cstrong\u003efig\u003c\/strong\u003e, and \u003cstrong\u003eCorinthian raisin\u003c\/strong\u003e, complemented by delicate \u003cstrong\u003efloral\u003c\/strong\u003e touches, \u003cstrong\u003espicy\u003c\/strong\u003e nuances of cinnamon and nutmeg, as well as a finely integrated \u003cstrong\u003ewoody\u003c\/strong\u003e register with accents of walnut and caramel.
