The thirty- to forty-year-old ungrafted vines grow here in land spared by phylloxera, in sandy soils over limestone, strewn with large stones. The altitude and temperature swings preserve a remarkable acidity, a guarantee of freshness for these indigenous grape varieties.\u003c\/p\u003e\u003cp\u003eThe grapes are harvested by hand, destemmed and crushed, then ferment with their native yeasts in large, temperature-controlled concrete tanks without epoxy lining. The golden-yellow colour heralds a fresh palate, enlivened by lively acidity and a complexity that reveals itself in layers.
