It comes from the Rapsani appellation, around 50 km south of Naoussa, at the foot of\u003cstrong\u003e Mount Olympus\u003c\/strong\u003e, at 600 m above sea level. The vines are farmed organically on schist soils rich in quartz and clay-limestone. The harvest is done by hand, then the grapes are gently pressed. After a one-month maceration, the wine ages for 18 months in old 500-litre barrels.
