The blend includes 19% Grands Crus and 45% Premiers Crus, the highest-ranked villages of the Champagne vineyards. In a cool climate, between oceanic and continental influences, the vines sink their roots into a chalky subsoil that retains water and gives the wines their mineral tension, finesse and great ageing potential.\u003c\/p\u003e\u003cp\u003eThis 2015 vintage blends 60% Pinot Noir, 30% Chardonnay and 10% Meunier, all from the same harvest. The wines complete their full malolactic fermentation before bottling, carried out in May 2016, followed by second fermentation in bottle. The cuvée then rests for seven years in the cellars on rue des Moissons before receiving a brut dosage of 6 g\/l. Jetting, practised by the house, limits the use of sulphites.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003eripe apple\u003c\/strong\u003e, \u003cstrong\u003eripe pear\u003c\/strong\u003e, \u003cstrong\u003equince\u003c\/strong\u003e, \u003cstrong\u003ebergamot\u003c\/strong\u003e, \u003cstrong\u003ecandied lemon zest\u003c\/strong\u003e, \u003cstrong\u003elinden blossom\u003c\/strong\u003e, \u003cstrong\u003etoasted brioche\u003c\/strong\u003e and \u003cstrong\u003eroasted hazelnut\u003c\/strong\u003e. The straw colour with soft golden glints heralds a very expressive nose, carried by orchard fruit.
