The upper part of the plot, facing south-east, rests on residual clays with few stones, while the lower part, facing north, takes root in shallow limestone. The vines, 45 years old on average, are worked by Domaine Gaillard with mechanical weeding.\u003c\/p\u003e\u003cp\u003eThe harvest is done by hand. After gentle pressing and static settling at 15 °C, alcoholic fermentation takes place at 18 °C with native yeasts, followed by malolactic fermentation. The cuvée is vinified without sulphur. Ageing takes place 10% in new barrels and 90% in tank, to retain the freshness of the fruit.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003ehoney\u003c\/strong\u003e, \u003cstrong\u003eacacia\u003c\/strong\u003e, \u003cstrong\u003ehoneysuckle\u003c\/strong\u003e, \u003cstrong\u003eyellow peach\u003c\/strong\u003e, \u003cstrong\u003eapricot\u003c\/strong\u003e, \u003cstrong\u003epear\u003c\/strong\u003e, \u003cstrong\u003efresh butter\u003c\/strong\u003e and \u003cstrong\u003evanilla\u003c\/strong\u003e. The straw-yellow colour with golden glints precedes an open nose of lovely lightness.
