This riserva comes solely from particella 587, planted with century-old vines, largely pre-phylloxera and ungrafted, bush-trained (alberello) at a density of 9,000 to 10,000 vines per hectare. The very steep soil is made up of volcanic sands rich in minerals and small pumice scoria, under a high-hill climate softened by the sea.\u003c\/p\u003e\u003cp\u003eThe grapes are picked and sorted by hand between late September and early October, destemmed and then gently pressed. Fermentation takes place in stainless-steel tanks at 25 °C, with a long maceration and a native yeast selected by the estate from its own vineyards. After malolactic fermentation in stainless steel, the wine matures for around twenty-four months in large 15-hectolitre French oak casks, then refines in bottle, for sixty months in total before release.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003ewild blackberry\u003c\/strong\u003e, \u003cstrong\u003echerry\u003c\/strong\u003e, \u003cstrong\u003estrawberry\u003c\/strong\u003e, \u003cstrong\u003eblackcurrant\u003c\/strong\u003e, \u003cstrong\u003espices\u003c\/strong\u003e, \u003cstrong\u003eprecious wood\u003c\/strong\u003e, \u003cstrong\u003esmoke\u003c\/strong\u003e, \u003cstrong\u003etar\u003c\/strong\u003e and \u003cstrong\u003eorange zest\u003c\/strong\u003e. The ethereal, intense bouquet marries small wild fruits with spicy, smoky nuances typical of the volcano.
