The estate farms its own vines using a sustainable approach certified Napa Green.\u003c\/p\u003e\u003cp\u003eThe grapes are hand-harvested in the cool hours, then sorted in two stages, by cluster and by berry. After a cold soak on the skins, fermentation is carried out at a warm temperature with gentle pump-overs, followed by an extended maceration before pressing.
