Let's talk little, let's talk wine
M3 Chardonnay 2023Shaw & Smith
The M3 Chardonnay cuvée comes from the renowned Adelaide Hills vineyard in Australia, renowned for its ideal climatic conditions and varied soils. Located at an altitude of approximately 400 meters, this region benefits from cool nights that allow for a slow and balanced ripening of the grapes. The well-drained slopes and varied exposures allow for the cultivation of highly expressive Chardonnays, revealing the unique terroir of the Adelaide Hills. This results in wines of remarkable finesse, where the quality of the grapes is highlighted.
To craft this prestigious cuvée, Shaw & Smith adopts a traditional winemaking method. The grapes are carefully hand-harvested to ensure optimal selection at ripening. Once in the cellar, fermentation takes place in oak barrels, promoting the integration of complex aromas while preserving the purity of the fruit. The wine is then aged on lees for approximately nine months, a practice that enriches the texture and depth of the Chardonnay. This meticulous process results in an elegant and balanced wine, faithful to the estate's hallmarks.
This wine reveals notes of William pear , of chamomile , of lemon, citrus peel, toasted hazelnut , flint and gunflint . On the palate, the sensation is both round and vibrant, offering a beautiful balance between texture and acidity . The finish is refined and complex, each sip revealing the signature of the Adelaide Hills terroir.
Where are we traveling?
AdelaideAustralia
Adelaide is a region located in the Mount Lofty Range in South Australia. It is one of Australia's oldest wine-growing regions, with viticulture dating back to the late 19th century. The key to the region's viticulture is the altitude of its vineyards, which range from 400 to 650 meters. Throughout the Adelaide Hills region, the ripening season has always been dry. This, combined with cooler temperatures, allows the grapes to ripen at a slower pace, resulting in concentrated and elegant wines.
The little history of the country
Australia
Australia began producing wine more than two centuries ago. This has resulted in a country rich in old vines, multi-generational winemaking families and an ingrained knowledge and respect for craftsmanship. Add to that a thirst to explore and innovate, a fearless attitude and a diverse notebook of 65 wine regions in many climates, and you have the makings of an extraordinary wine country unlike any other.
Australia burst into export markets in the 1980s and since then has been providing the world with vibrant, fruity and exceptional value wines. Until the late 1990s and early 2000s, Australian wine history was dominated by examples of Shiraz, Grenache and overly concentrated red blends. Between these two extremes lies the diversity of Australia's offering of high quality and regional wines that has always existed.
Australian viticulture is mainly concentrated on the southern oceanic edge where conditions are cooler. There are four main wine regions located around major cities. Western Australia around Perth, South Australia around Adelaide, Victoria around Melbourne and New South Wales around Sydney.
The country is one of the largest wine producers in the world, and was the 4th largest exporter in the world in 2011. This recent development now makes Australia one of the most prominent countries for the quality of its wines. You can taste Australian wines all over the country. Each Australian region has its own grape varieties. Australian wines are defined by their grape variety, unlike French wines which are defined by their terroir.
