They farm 4.5 hectares, 3 of them in Barbaresco, for a modest production of 25,000 bottles. The vines are between 60 and 70 years old and grow on marly ground, on 2 highly reputed crus of \u003cstrong\u003eBarbaresco \u003c\/strong\u003e(Montestefano and Ovello). Their motto: \"Little, but good!\". The business was born of a desire to tend vines and produce great wines, driven by their passion, their knowledge of wine and the practice of \u003cstrong\u003ebiodynamics\u003c\/strong\u003e. Pruning and work in the vineyard follow the lunar cycles. The only products used are sulphur in small doses and copper. Natural fertilisers made of legumes, grasses and mustard seeds enrich the soil and increase biodiversity by encouraging beneficial insects. The two friends' philosophy is to let nature do as much as possible. \"Not doing\" can be as powerful as \"doing\".\u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eForavia \u003c\/strong\u003emeans \"off the beaten track\" in Piedmontese dialect. It was born in 2018 from the desire and the need to fight climate change in favour of fresher, more elegant noses. It is a Langhe \u003cstrong\u003eNebbiolo \u003c\/strong\u003emade with 60% whole bunches, covered with pressed must. Fermentation is spontaneous with native yeasts. Once fermentation is over, Stefano opens the vat and the still-whole bunches are pressed. After malolactic fermentation, the wine is aged in equal parts in concrete tanks and old barriques \u003cspan\u003efor 8 months\u003c\/span\u003e. This wine reveals aromas of \u003cstrong\u003efaded flowers\u003c\/strong\u003e, \u003cstrong\u003eraspberries\u003c\/strong\u003e,\u003cstrong\u003e red cherry\u003c\/strong\u003e, \u003cstrong\u003eGariguette strawberry\u003c\/strong\u003e, \u003cstrong\u003eredcurrants\u003c\/strong\u003e, \u003cstrong\u003ewhite pepper\u003c\/strong\u003e, \u003cstrong\u003eforest fruits \u003c\/strong\u003eand \u003cstrong\u003ewild berries\u003c\/strong\u003e.
