dominio-de-pingus-psi-espagne
Dominio de Pingus - Psi - 2022

Located in the heart of Ribera del Duero, Dominio de Pingus cultivates the Psi cuvée from a collection of old Tempranillo vines spread around historic villages like La Horra and Roa, on the northern bank of the Duero. The plots, often at high altitude, rest on soils mixing clays, limestones, and sands, offering a great diversity of situations. This project aims to enhance the local viticultural heritage by working with small winegrowers, in a spirit of respectful viticulture and promotion of the Castilian terroir.

The Psi grapes are hand-harvested from old Tempranillo and Garnacha vines, carefully sorted, then transferred to vats with partially destemmed bunches. Fermentation takes place in concrete tanks and large oak vats, with gentle pump-overs to preserve the fruit's finesse. Aging continues in large oak vats and concrete tanks, aiming to highlight the purity and freshness of the terroir rather than overt oak influence, before bottling at the estate.

This wine reveals notes of ripe red fruits, juicy black fruits, and delicate floral touches, complemented by spicy nuances and a subtle, integrated woody character.
