The vines, around thirty years old, are planted on the famous Kimmeridgian terroir, the marls and limestones rich in fossilised oysters laid down by a Jurassic sea. The semi-continental climate, with cold winters and sometimes frosty springs, imposes slow ripening that preserves Chardonnay's acidity and gives it the mineral tension characteristic of the appellation.\u003c\/p\u003e\u003cp\u003eThe Chardonnay grapes are moved by gravity, without pumping, from receiving the harvest through to settling. Alcoholic fermentation is carried out with native yeasts, at a temperature regulated between 18 and 20 °C, and malolactic fermentation is completed. The wine is then aged on the lees, entirely in stainless-steel tanks, for seven to nine months. This ageing preserves the purity of the fruit and the saline freshness of the Kimmeridgian terroir.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003elemon\u003c\/strong\u003e, \u003cstrong\u003efresh almond\u003c\/strong\u003e, \u003cstrong\u003egrapefruit\u003c\/strong\u003e, \u003cstrong\u003egreen apple\u003c\/strong\u003e, \u003cstrong\u003ehawthorn\u003c\/strong\u003e, \u003cstrong\u003ewhite flowers\u003c\/strong\u003e, \u003cstrong\u003eoyster shell\u003c\/strong\u003e and \u003cstrong\u003egunflint\u003c\/strong\u003e. The pale yellow colour with silvery-green glints introduces a nose that opens on fresh almond, giving way to a core of citrus.
