From north to south, each Burgundy wine region, from Chablis to the Mâconnais, has its own microclimate. In Chablis, winegrowers fight spring frosts by wrapping the vines in a protective cocoon of frozen water. On the Côte de Nuits and the Côte de Beaune, the slopes catch the sunlight, bringing warm summers that fill the grapes with sunshine, while the Mâconnais enjoys an almost Mediterranean climate, drier and less prone to frost.
