The Sangiovese grape harvest takes place at the end of September and beginning of October. Maceration and fermentation takes place in stainless steel vats at a controlled temperature for 25 days. The wine is aged in 20 hl casks for a minimum period of 9 months followed by 4 months in the bottle.
