Stephanie uses the same minimal-intervention winemaking approach to produce pure, site-specific wines. Their wines bear the Afrikaans names of various \u003cspan style=\"color: #ff8000;\"\u003e\u003cstrong\u003ethistles and weeds\u003c\/strong\u003e\u003c\/span\u003e (Thistle \u0026amp; Weed) found among the vines grown in the Cape. Etienne and Steph draw parallels between thistles and weeds and the uncompromising tenacity and survival abilities of old vines.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\" class=\"\"\u003e \u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\" class=\"\"\u003e\u003cspan data-mce-fragment=\"1\"\u003eHere is the second Chenin to join the \u003cstrong\u003eThistle and Weed\u003c\/strong\u003e family. \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003eThe grapes come from a small 0.3 ha vineyard of 40-year-old vines at the foot of \u003cstrong\u003eStellenbosch\u003c\/strong\u003e. \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003eThe \u003cstrong\u003eBrandnetel\u003c\/strong\u003e cuvée (nettle in Afrikaans) takes its name from this tenacious \u003cstrong\u003eweed\u003c\/strong\u003e, a sign of protection in folklore and of vitality for the soil. The vineyard was planted in 1980 and is a living library of historic rootstocks, with more than 33 different rootstocks in this old experimental plot. The grapes were harvested by hand, gently whole-bunch pressed and fermented naturally. Only the free-run juice was fermented in third-fill French oak barrels. The wine then ages for 9 months in old French oak before being bottled without fining or filtration. This wine reveals notes of \u003cstrong\u003equince\u003c\/strong\u003e, \u003cstrong\u003ewhite peach\u003c\/strong\u003e, \u003cstrong\u003eblood orange\u003c\/strong\u003e, \u003cstrong\u003epear\u003c\/strong\u003e, \u003cstrong\u003eapricot\u003c\/strong\u003e, \u003cstrong\u003eapple\u003c\/strong\u003e, \u003cstrong\u003eacacia blossom\u003c\/strong\u003e and \u003cstrong\u003eoyster shell\u003c\/strong\u003e.
