Paolo vinifies his wines using grapes from the best regions of \u003cstrong\u003eChianti\u003c\/strong\u003e , mainly from the Rufina region. \u003cstrong\u003eRufina\u003c\/strong\u003e is the smallest sub-region of Chianti and much hillier and higher in altitude, reflecting cooler conditions which allow the grapes to ripen more slowly and therefore produce more balanced wines. The cuvée is composed of 95% \u003cstrong\u003eSangiovese\u003c\/strong\u003e and 5% Colorino grape variety. We quickly distinguish pleasant aromas of \u003cstrong\u003ered and black cherry\u003c\/strong\u003e , \u003cstrong\u003eraspberry\u003c\/strong\u003e , \u003cstrong\u003eplum\u003c\/strong\u003e , \u003cstrong\u003eviolet\u003c\/strong\u003e , \u003cstrong\u003evanilla\u003c\/strong\u003e , \u003cstrong\u003ewhite pepper\u003c\/strong\u003e as well as some \u003cstrong\u003ebalsamic notes\u003c\/strong\u003e .
