Pierre Elie Carron farms eight hectares there, spread over some thirty plots and around ten grape varieties. The Mazembroz plot, facing south-south-east, was planted in 2017 and 2018. Its deep but stony soil is an alluvial fan composed mainly of gneiss with a few limestone elements. Completer, also called Malanser, is an extremely rare indigenous grape variety.\u003c\/p\u003e\u003cp\u003eThe grapes are whole-bunch pressed. Part of the alcoholic fermentation takes place directly in barrel, and the wine does not undergo malolactic fermentation, in order to retain its liveliness. It is then aged for twelve months in oak barrels. The cuvée blends three barrels: one new, one second-fill and one fifth-fill. This oak, still very present in the wine's youth, is set to blend in over the years of cellaring.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003etoast\u003c\/strong\u003e, \u003cstrong\u003eroasted coffee\u003c\/strong\u003e, \u003cstrong\u003efresh butter\u003c\/strong\u003e, \u003cstrong\u003ecream\u003c\/strong\u003e, \u003cstrong\u003elemon\u003c\/strong\u003e, \u003cstrong\u003equince\u003c\/strong\u003e, \u003cstrong\u003eripe apple\u003c\/strong\u003e and \u003cstrong\u003ehoney\u003c\/strong\u003e. The rather delicate nose combines toasty and creamy touches from the ageing with discreet fruit.
