They farm 4.5 hectares, 3 of them in Barbaresco, for a modest production of 25,000 bottles. The vines are between 60 and 70 years old and grow on marly ground, on 2 highly reputed crus of \u003cstrong\u003eBarbaresco \u003c\/strong\u003e(Montestefano and Ovello). Their motto: \"Little, but good!\". The business was born of a desire to tend vines and produce great wines, driven by their passion, their knowledge of wine and the practice of \u003cstrong\u003ebiodynamics\u003c\/strong\u003e. Pruning and work in the vineyard follow the lunar cycles. The only products used are sulphur in small doses and copper. Natural fertilisers made of legumes, grasses and mustard seeds enrich the soil and increase biodiversity by encouraging beneficial insects. The two friends' philosophy is to let nature do as much as possible. \"Not doing\" can be as powerful as \"doing\".\u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eThis \u003cstrong\u003eBarbaresco \u003c\/strong\u003ecomes \u003cspan\u003efrom the two crus \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003eOvello\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e and \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003eSanto Stefano\u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003e. The selected grapes are harvested by hand from old vines aged 60 years and more. \u003c\/span\u003eFermentation in stainless-steel tanks lasts 4 to 5 weeks. Ageing lasts 18 months in large oak casks and a further 6 months in bottle, without clarification or filtration. The colour is ruby. This wine reveals aromas of \u003cstrong\u003efaded flowers\u003c\/strong\u003e, \u003cstrong\u003eripe raspberries\u003c\/strong\u003e, \u003cstrong\u003echerry stone\u003c\/strong\u003e, \u003cstrong\u003eblueberries\u003c\/strong\u003e, \u003cstrong\u003etobacco\u003c\/strong\u003e, \u003cstrong\u003ewhite pepper\u003c\/strong\u003e, \u003cstrong\u003ehumus \u003c\/strong\u003eand \u003cstrong\u003ewild berries\u003c\/strong\u003e.
