The vineyards are located at an altitude varying from 150 to 450 m above sea level. To understand this wine, you have to understand how it is made. It is made using the \u003cstrong\u003e“ripasso” technique\u003c\/strong\u003e which is a specialty of the Valpolicella region. This technique developed in the 1970s when winemakers remembered an ancestral technique consisting of adding pressed \u003cstrong\u003eskins\u003c\/strong\u003e \u003cstrong\u003efrom already fermented great Amarone wines\u003c\/strong\u003e to classic Valpolicella wine. This astonishing technique causes a new fermentation thanks to the sugars and yeasts that can still be found in the rich Amarone marc. This “new juice” will then be aged in \u003cstrong\u003eoak barrels\u003c\/strong\u003e for \u003cstrong\u003e10 to 12 months\u003c\/strong\u003e , depending on the vintage. On the palate we can distinguish complex aromas of \u003cstrong\u003edried red flowers\u003c\/strong\u003e , \u003cstrong\u003eblack cherry\u003c\/strong\u003e , \u003cstrong\u003eplum\u003c\/strong\u003e , \u003cstrong\u003eblackberries\u003c\/strong\u003e , \u003cstrong\u003esweet spices\u003c\/strong\u003e , \u003cstrong\u003eundergrowth\u003c\/strong\u003e , \u003cstrong\u003etobacco\u003c\/strong\u003e and \u003cstrong\u003ecocoa\u003c\/strong\u003e .
