The Gippsland Pinot Noir cuvée comes from a vineyard cultivated by the Matthews family in Berry's Creek (planted in 1998 on red volcanic soils ) . The vines have an average age of 20 to 40 years and are farmed organically. This cool, humid, maritime terroir, combined with red volcanic soils, gives the Pinot Noir an intense freshness, pure fruit expression and elegant structure typical of the best cool climate wines .

Vinification is carried out according to a minimalist intervention philosophy: manual harvesting, complete destemming and slow fermentation using indigenous yeasts in open wooden and stainless steel vats, without temperature control or pumping over, for approximately 30 days, followed by aging for 10 to 14 months in French and acacia barrels. Bottling is done without filtration and with minimal addition of sulfur.

This Pinot Noir reveals a refined and complex palette of aromas of cherry, raspberry, pomegranate, plum, violet, iris, clove, cinnamon and forest notes . On the palate, the attack is light but concentrated, with silky tannins, clean acidity and a finely structured texture; the finish is long, savory, and opens with notes of cigar box , undergrowth and liquorice, confirming the imprint of the volcanic soil of Gippsland .
