The climate, drier and sunnier than in Rioja Alta, is tempered by altitude and winds, which favours full ripeness while preserving the freshness of the fruit.\u003c\/p\u003e\u003cp\u003eThe grapes are harvested by hand and then fully destemmed. Fermentation takes place with native yeasts in wooden vats, with the cap submerged, followed by a 35-day maceration. Malolactic fermentation takes place spontaneously in barrel.
