dominio-del-aguila-reserva-espagne
Dominio del Águila - Reserva - 2021

This Reserva aims to reflect the village of La Aguilera, in Ribera del Duero, in Castilla y León. The grapes come from the estate's oldest vines, a field blend of Tempranillo and a few ancient varieties, at an average altitude of 880 metres. The soils mix limestone, clay and sand, under a continental climate marked by harsh winters and wide day-night temperature swings, which preserve the freshness of the grapes.

The grapes are harvested by hand, then vinified as whole bunches, foot-trodden, with native yeasts. Fermentation proceeds slowly in concrete tanks, with a maceration of 18 to 28 days. The wine is then aged for 27 months in French barriques, where malolactic fermentation slowly completes, before bottling without fining or filtration.

This wine reveals notes of blackcurrant, blackberry, black cherry, graphite, charcoal, violet, vanilla and milky notes.
