The estate takes its name from a meteorite crater that marks its landscape. The Faugères vineyards stretch over the foothills of the Cévennes, north of Béziers, on schist soils renowned for producing fresh, deep reds. The grapes are grown organically.\u003c\/p\u003e\u003cp\u003eThis blend of organically grown Syrah, Grenache and Cinsault is destemmed, then the grapes macerate for four weeks to extract colour and structure. Fermentation takes place in stainless-steel tanks. The wine is then aged for 28 months, a long maturation that allows the aromas to meld and gain intensity.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003eblackcurrant\u003c\/strong\u003e, \u003cstrong\u003eblack cherry\u003c\/strong\u003e, \u003cstrong\u003eblackberry\u003c\/strong\u003e, \u003cstrong\u003ethyme flower\u003c\/strong\u003e, \u003cstrong\u003egarrigue\u003c\/strong\u003e, \u003cstrong\u003eliquorice\u003c\/strong\u003e, \u003cstrong\u003epepper\u003c\/strong\u003e and \u003cstrong\u003esage\u003c\/strong\u003e. The ruby colour opens onto a nose of black fruit lifted by a balsamic hint and wild herbs.
