As every year, this cuvée comes from the last grapes hand-picked during the harvest season. An interesting aspect of this wine is how difficult the grapes are to process. Their high \u003cstrong\u003esugar concentration\u003c\/strong\u003e during fermentation and blending calls for patience and delicacy. During fermentation, the natural excess of sugar slows down the yeasts and results in a slow fermentation. This preserves the grape's authentic \u003cstrong\u003efresh aromas\u003c\/strong\u003e while generating others, and gives \u003cstrong\u003eunctuousness\u003c\/strong\u003e and a velvety texture on the palate. The nose is very complex, with aromas of yellow and exotic fruit such as \u003cstrong\u003eapricot\u003c\/strong\u003e, \u003cstrong\u003epineapple\u003c\/strong\u003e, \u003cstrong\u003emango\u003c\/strong\u003e and \u003cstrong\u003epeach\u003c\/strong\u003e, as well as notes of \u003cstrong\u003ewhite flowers\u003c\/strong\u003e complemented by a subtle touch of \u003cstrong\u003ehoney\u003c\/strong\u003e.
