dominio-del-aguila-canta-la-perdiz-espagne
Dominio del Águila - Canta la Perdiz - 2020

Located in the heart of the Ribera del Duero region, in the province of Burgos in Castile and León, the Canta la Perdiz vineyard stretches around the village of La Aguilera. The vines, planted at altitude on hillsides with limestone and clay-limestone soils, benefit from a continental climate characterized by significant temperature variations. This cool, well-ventilated terroir allows for a slow and complete ripening of the grapes, resulting in wines that are both profound and precise. The Dominio del Águila estate cultivates primarily very old vines using organic farming methods.

The grapes are harvested by hand into small crates, with meticulous sorting both in the vineyard and at the winery. Fermentation takes place in tanks, with a significant proportion of whole clusters and very gentle extractions to preserve aromatic finesse. Aging is lengthy, primarily in French oak barrels, with a judicious use of new oak, to promote a slow and harmonious maturation of the wine, while respecting the purest expression of the Ribera del Duero terroir.

This wine reveals notes of ripe black fruit , fresh red fruit , and plum , complemented by delicate floral touches, spicy hints of licorice and pepper, and woody accents reminiscent of cedar and vanilla.
