The Antoniolo family, pioneers in bottling the appellation's single crus, has vinified San Francesco separately since 1974 to reveal the singular personality of this plot, the most delicate of its trio of crus.\u003c\/p\u003e\u003cp\u003eMade from Nebbiolo, the grapes ferment spontaneously with native yeasts in cement tanks, with maceration of about eighteen days. The particularly long ageing takes place in two stages: eighteen months mainly in previously used barrels, then eighteen months in Slavonian and French oak vats (foudres) of 25 to 35 hectolitres. Finally, the wine rests for a year in bottle before release. This patient work refines the tannic structure while preserving the airy elegance specific to this cru.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003emorello cherry\u003c\/strong\u003e, \u003cstrong\u003ecrushed flowers\u003c\/strong\u003e, \u003cstrong\u003erose\u003c\/strong\u003e, \u003cstrong\u003emint\u003c\/strong\u003e, \u003cstrong\u003edried herbs\u003c\/strong\u003e, \u003cstrong\u003eslate\u003c\/strong\u003e, \u003cstrong\u003echalk\u003c\/strong\u003e, \u003cstrong\u003egraphite\u003c\/strong\u003e and \u003cstrong\u003etruffle\u003c\/strong\u003e. The floral, mineral nose gains depth with aeration. The palate is medium-bodied yet tight-knit, driven by mouth-watering acidity and firm tannins that give it great energy.
