Its steep slopes rest on blue Devonian slate, finely weathered and rich in minerals. In the cool climate of the Saar, the grapes ripen slowly until late autumn, giving wines of a precision and mineral finesse that have made this hillside famous.\u003c\/p\u003e\u003cp\u003eThe grapes are harvested by hand at the end of October and the beginning of November, with yields limited to around 5.5 tonnes per hectare. The musts ferment spontaneously with native yeasts in stainless-steel tanks.
