The Glera vines are planted on hillsides between 300 and 500 metres above sea level, on shallow soils of morainic origin, trained in Sylvoz at a density of 1,800 to 3,500 vines per hectare. The harvest takes place in the second half of September.\u003c\/p\u003e\u003cp\u003eThe base wine is placed in an autoclave for the second fermentation, where it ferments for 18 to 20 days with selected yeasts, at a controlled temperature of 14 to 16 °C. Once a pressure of around 6 bar is reached, it is chilled to -4 °C, then kept for at least a month at 8-10 °C in contact with the yeasts, before filtration and isobaric bottling.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003erusset apple\u003c\/strong\u003e, \u003cstrong\u003epeach blossom\u003c\/strong\u003e, \u003cstrong\u003epear\u003c\/strong\u003e, \u003cstrong\u003ewhite peach\u003c\/strong\u003e, \u003cstrong\u003elime\u003c\/strong\u003e, \u003cstrong\u003eacacia blossom\u003c\/strong\u003e, \u003cstrong\u003emelon\u003c\/strong\u003e and \u003cstrong\u003ebrioche\u003c\/strong\u003e. The clean, pleasantly fruity nose evokes russet apple and peach blossom.
