Traditionally fruit producers, this family has diversified into wine. The vineyards are located in the shadow of the El Dezcabazado volcano and the resulting soils are both rocky and fertile . Maule is in the southern part of the Central Valley and temperatures are much cooler there than further north. Pinot thrives in this environment and benefits from healthy conditions where it can generally ripen without humidity. The cooler temperatures allow it to retain crucial acidity which contributes to the balance of the ripe fruit. The grapes are harvested during the coolest part of the day to ensure they reach the winery in optimal conditions. Temperatures are kept quite low throughout the vinification, to allow the Pinot noir to express its varietal character. No aging in oak barrels is applied. This wine is expressed with aromas of plum , wild strawberries , raspberry , cherry , black fruit jam , blue flowers and smoky notes .
