Cetto's vineyards in Baja California, in north-western Mexico, the country's main wine region. The house is based in the Valle de Guadalupe, a few kilometres from the Pacific Ocean, where a Mediterranean-type climate combines generous sunshine with the cooling influence of sea breezes. These conditions favour even ripening of the grapes while preserving the balance and purity of the fruit.\u003c\/p\u003e\u003cp\u003eThe grapes are machine-harvested. They ferment in temperature-controlled stainless-steel tanks, at between 28 and 30 °C, for around fifteen days, in order to extract colour and structure while keeping the brightness of the fruit. The wine is then aged for twelve months in French oak barrels and matured for six months in bottle before release.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003eraspberry\u003c\/strong\u003e, \u003cstrong\u003ered cherry\u003c\/strong\u003e, \u003cstrong\u003eblackcurrant\u003c\/strong\u003e, \u003cstrong\u003ecaramel\u003c\/strong\u003e, \u003cstrong\u003evanilla\u003c\/strong\u003e, \u003cstrong\u003ecocoa\u003c\/strong\u003e, \u003cstrong\u003eeucalyptus\u003c\/strong\u003e and \u003cstrong\u003eliquorice\u003c\/strong\u003e. The ruby colour heralds a palate with a supple, well-balanced attack, a hint of sweetness and mellow tannins.
