Domaine Parent, a family of winegrowers established in Pommard for nearly thirteen generations, grows Pinot Noir there on clay-limestone soils. Certified organic since 2013, the estate farms its vines using biodynamic methods, with partial ploughing by horse on the premiers crus.

The harvest is done by hand, followed by sorting on two tables, one of them vibrating. Depending on the vintage, the grapes are destemmed or vinified with a proportion of whole bunches, after three to five days of cold maceration. Fermentation, at controlled temperature, is accompanied by gentle punching down and pumping over, for a maceration period of 16 to 18 days. Ageing lasts 14 to 16 months in French oak barrels, 35 to 40% of them new.

This wine reveals notes of cherry, plum, morello cherry, raspberry, peony, cinnamon, clove, pepper and blond tobacco.
