The Bonarda vines are planted there at around 1,000 metres above sea level, on limestone and silty soils. The semi-desert climate, very sunny by day and cool at night, makes it possible to harvest ripe grapes that keep a natural acidity, precious for a sparkling wine.

This high-altitude sparkling wine is made using the traditional method, with a second fermentation in bottle. It is then aged at length on fine lees, which refines the bubbles and adds complexity. At disgorgement, no dosage liqueur is added, in order to keep a dry, precise profile. Production remains tiny, in the order of a few thousand bottles.

This wine reveals notes of nectarine, mandarin, redcurrant, strawberry, walnut, pistachio, brioche and peach blossom. Fine, persistent bubbles enliven a colour with coppery glints. The expressive, highly aromatic palate offers balanced, persistent acidity, lovely liveliness and a dry, saline finish.

https://www.lebaroudeurduvin.com/en-be/products/altos-las-hormigas-burbujas-de-los-andes-brut-rose-argentine
