The grapes are carefully hand-picked and \u003cstrong\u003esorted\u003c\/strong\u003e in the winery so that only the best fruit is used. Fermentation took place in stainless-steel tanks with regular pump-overs, followed by 15 days of skin maceration. After vinification, the wine is aged in \u003cstrong\u003eFrench oak barrels\u003c\/strong\u003e for \u003cstrong\u003e17 months\u003c\/strong\u003e in Far Niente's historic stone cellars. The result is a sumptuous Cabernet with aromas of \u003cstrong\u003eblackcurrant\u003c\/strong\u003e, \u003cstrong\u003eblack berries\u003c\/strong\u003e, \u003cstrong\u003ewild raspberry\u003c\/strong\u003e, \u003cstrong\u003eblackberry\u003c\/strong\u003e, \u003cstrong\u003eblack plum\u003c\/strong\u003e, \u003cstrong\u003ecigar box\u003c\/strong\u003e and \u003cstrong\u003ecedar\u003c\/strong\u003e, with notes of \u003cstrong\u003estar anise\u003c\/strong\u003e, \u003cstrong\u003eblack tea\u003c\/strong\u003e and \u003cstrong\u003ebitter chocolate\u003c\/strong\u003e.
