This terroir gives the Burgundian grape variety a fresh expression, marked by the coolness of the Jura.\u003c\/p\u003e\u003cp\u003eAt the estate, the Pinot Noir is vinified with a long maceration, which extracts colour, fruit and a firmer tannic structure than for the Poulsard, which is vinified with a short maceration.
